KATRINA PARLATO A native of Northern California, Katrina Parlato began her career in the restaurant industry at the young age of 14. She grew up working in the family business, Parlatos’, an Italian- American restaurant started by her grandparents over fifty years ago. From her earliest childhood experiences, she has developed a unique understanding of the unconditional effort and dedication essential to running a successful restaurant. Katrina’s interest in the restaurant and hospitality industry moved beyond the family business in 1997 when she assumed the responsibilities of managing the dining room at San Francisco’s much admired Boulevard Restaurant for over six years.

As the General Manger of Quince, Katrina oversees all aspects of the restaurant’s operations including staffing, training, and service. Her Italian heritage has contrib- uted to her passion and knowledge of the foods and wine of Italy, and is ideally matched to Michael Tusk’s Californian, Italian-inspired cuisine. She is also responsible for the Quince cheese program, featuring exceptional local and hand crafted cheeses from around the world.
